PUCCIA IS A TRADITIONAL  ROUND SANDWICH FROM PUGLIA, SOUTHERN ITALY. OUR FRESHLY BAKED PUCCIA IS NATURALLY FERMENTED MADE FROM OUR SLOW-RISING SOURDOUGH WITH AT LEAST 72 HOURS SLOW PROOF AND FERMENTATION THEN FRESHLY BAKED IN OUR STONE BASE OVEN.

OUR SOURDOUGH PUCCIA  IS VERY UNIQUE IN TRUE ARTISAN STYLE, LIGHT & AIRY. 

WE THINK THAT THE BEST TEXTURE AND FLAVOUR IS ON DAY 3 THROUGH DAY 7 OF FERMENTATION THANKS TO OUR TEMPERATURE AND HUMIDITY – CONTROLLED FERMENTATION, THAT’S WHY WE SERVE OUR SOURDOUGH ONLY IN THIS RANGE !
